One of our favorite seasonal treats is the bright, summery crunch of fire roasted corn. We grill the ears in the husk for a smoky flavor and succulent caramelization. We love grilled corn so much, we put it in pretty much everything we can, including these five seasonal items:

Grilled Corn on the Cob

Fresh grilled-in-the-husk corn copiously drizzled with our tangy chipotle aioli and sprinkled with Cotija cheese crumbles. Served with a lime wedge.

Roasted Corn Empanadas

Roasted corn pockets with Monterey Jack cheese, roasted chiles, sliced scallions, cumin, coriander and cilantro. Served with Fire Roasted Tomato-Chipotle salsa. Formerly known as our Plataversary Empanadas from last fall.

Crab & Corn Quesadilla

Lump crabmeat with smoky grilled corn, fresh basil, pico de gallo, and Cotija and Monterey Jack cheeses. Served with our grilled corn salsa on the side.

Grilled Chicken & Corn Burrito

Fresh grilled corn with chicken breast, roasted chiles, goat cheese, Monterey Jack cheese and pico de gallo. Topped with Colorado sauce, grilled corn salsa on the side. Also available as a big, juicy Enchilada.
